Guilt free cookies that are moist, buttery and chewy. Enjoy them with a cup of almond or coconut milk and pretend you’re 10 again!
INGREDIENTS – Makes 10 cookies
250g peanut butter
2 tbsp coconut oil
150ml light agave nectar
2 eggs
1 tsp vanilla extract
1 tsp baking soda
65g coconut flour
Pinch of salt
Preheat oven to 180°C (160°C fan assisted oven).
Melt coconut oil and combine with peanut butter and agave. Stir and cool to room temperature.
Combine coconut flour, baking soda and salt. Set aside.
Mix the peanut butter mixture until creamy. Add vanilla extract, eggs (one at a time) and mix well.
Combine with coconut flour mixture. Scoop heaped tbsp of mixture and roll into 1 1/4″ balls, place on baking trace 2″ apart.
Bake for 10 mins until edges brown. Remove and cool.
